Three minutes. Fire first. It asks about the fire and food records a California kitchen can be asked to produce — and gives you back how many you could send today without looking anything up. No score, no grade.
A statewide study by Stovio Advisors, publisher of The Commercial Kitchen Standard. Fielded across California; findings publish here, county by county and statewide. Method and sourcing follow our editorial standards.

How California kitchens answered, when the study publishes
The first question asks whether you handle food safety, facility safety, or both— you’re only asked about your half. Anything that isn’t yours, you can forward to whoever holds it.

Disclosure
Stovio Advisors is a Cleaning Pros Plus, LLC company. Cleaning Pros Plus, HoodOps and EvidLY are commonly owned. At the end of the study you can ask for the statewide findings, a gap report for your county, or a conversation with EvidLY, a sister brand — each is optional, and none is required to see your own results. Answers are reported as statewide and county totals only.
Every question is drawn from what California kitchens are actually cited for, or from a record that decides whether a fire claim gets paid. None of it is a generic checklist.
Each record has four lines under it, plus one for records that are not yours — pick the one that’s true. The question is never only whether a record exists. It is whether you’d know before it lapsed, and how fast you could get it to whoever asked.
There are no right answers and nothing here is graded.
·Your result on screen the moment you finish. No email needed to see it.
·Under three minutes. Between 12 and 21 questions, depending on which half is yours. No free text.
·A gap report for your county afterwards, if you want one. Optional.
·Confidential. Reported only as statewide totals. “Not sure” is a real answer, and a real finding.
